John's Cornmeal cookies

Delicious right as they are...or dusted with sugar...or covered in chocolate...these are sure to please. Not super sweet and a little on the cakey side these are totally customizable. Use TFC blueberry finishing sugar for a quintessentially Maine flavor, or dip it in chocolate (as I did). So many choices! 


3/4 C butter (softened)

1/4 C brown sugar (I used TFC house made brown sugar)

1/2 C granulated white sugar

1 egg (Goronson's farm chicken egg used in this recipe)

1 t vanilla

3/4 C cornmeal (I used Maine Grains)

1 t baking powder

1/4 t salt

1 1/2 C Maine Grains Pastry Flour


- Cream butter and sugars together until light in color and fluffy

- Add egg and vanilla and mix together gently

- In a separate bowl mix cornmeal, baking powder, salt and flour

- Add dry ingredients to the creamed mixture

- Drop by the teaspoon full onto a baking sheet prepared with parchment paper

- Bake for 15 minutes or until slightly golden brown
